This heirloom variety originated as a naturally occurring chance seedling behind the smokehouse of William Gibbon's Bird-in-Hand farm in Lancaster county, Pa, was introduced in 1837. The green skin color and tart flavor is similar to Granny Smith, but Smokehouse ripens eight weeks earlier. This apple is ideal for all cooking, baking, salad and sauce purposes.
